Domaine Philippe Goulley is located on the left bank of the Serene River, was started as an organic farm in 1991 by Agri-Bio, and is one of the two organic vineyards in Chablis.  The soil consists of a limestone marl, dating back to the Jurassic Period.  These minerals deposited by glaciers many years ago, together with the frequent spring frost that blanket this land, help define the region of Chablis. With harvest finished in September and the wine making processes just getting started; Philippe uses some modern tools mixed with old wine making philosophies to produce his world class Chablis.

Philippe uses modern pneumatic presses, then uses only gravity to move his wines from container to container during the wine making process staying away from electric pumps.  He believes they change the consistency of the wine.  In his surgically clean stainless steel fermenting room, Philippe uses thermo regulation and light clay filtration to help control the consistency of his delicate wines.
