Soil	This southern exposed vineyard is situated, on strong steep terraces earthed by a sandy mix of fine white potters clay and lime stone. This combination is where the opportunity for this wine begins. These minerals make it possible to keep the beautiful freshness of these wines. Vinification	The grape clusters are picked and sorted by hand before being placed into the press. A soft slow pressing allows softer flavors to be found in his wine. After pressing the pulp and juice are allowed to macerate. Eric believes static washing after maceration allows the wine to hold its many subtle flavors, not stripping them away by more aggressive methods in practice at other vineyards. This wine is allowed to finish off, for the last months before bottling, breeding on fine lees.
